Welcome drink at the rooftop. 18:00 walking warm-up to Notre-Dame Cathedral + Saigon Central Post Office (15 min). 19:30 Bui Vien street-food walk, banh mi at Banh Mi Huynh Hoa, pho at Pho Hoa, beer at a bia-hoi (small group, max 8). Back at hostel by 22:30.
08:00 private guide pickup. 90-min drive to Cu Chi Tunnels, 90-min underground tour, the booby-trap demonstration, optional shooting-range. Lunch on own at the tunnels' cafe. Afternoon at War Remnants Museum (heavy, allow 2 hours). Coffee break at The Workshop or 14 Ton That Dam. Free evening, we'll send 5 vetted dinner picks (try Anh Tu Hem 47 for old Vietnamese).
